In a small bowl mix together Cajun spice, smoked cherry wood salt and allspice; stirring to blend. Sprinkle evenly over chicken, coating all sides.
Heat coconut oil in an 11” frying pan over medium heat. Add seasoned chicken. Fry about 4 minutes per side; you are looking for a deep golden color.
In a large measuring cup mix together Heroine IPA and apricot jam. Add to frying pan and simmer for 30 minutes; chicken should be cooked through at this point.
Mix together cornstarch and cold water. Stir into frying pan, mixing well. Simmer for another 4 minutes, stirring occasionally
Ready to serve or you may cool, refrigerate and reheat the following day.
