Ingredients
- 1 head cauliflower chopped into 1/2 inch pieces
- 1 cup fennel chopped
- 1/2 cup sweet onion chopped
- 2 TBSP. extra-virgin olive oil
- 4 sprigs fresh thyme (do not substitute dried thyme)
- 8 oz. pork sausage
- 1/2 tsp. poultry seasoning
- 1 lb. cooked spinach squeezed dry
- 1/2 cup freshly grated parmesan cheese
Servings: cups
Instructions
- While cauliflower mixture is baking; cook pork sausage in a large frying pan over medium heat, breaking sausage into small bits as it cooks. Sprinkle cooked sausage with poultry seasoning and add spinach. Stir to combine, shut off heat. Stir cooked cauliflower mixture into sausage mixture; add parmesan cheese and blend well.
- NOTE: Dressing may be made 1 day before serving. Refrigerate covered until ready to bake; bake until heated through in a 375’ oven.
