Instructions
  1. Heat oven to 400’. Toss together cauliflower, fennel, onion, EVOO and thyme leaves to coat evenly with oil. Spread mixture evenly in a 12”x17” shallow baking sheet; bake in preheated oven for 15 minutes. Remove from oven and set aside. Adjust oven heat to 375’.
  2. While cauliflower mixture is baking; cook pork sausage in a large frying pan over medium heat, breaking sausage into small bits as it cooks. Sprinkle cooked sausage with poultry seasoning and add spinach. Stir to combine, shut off heat. Stir cooked cauliflower mixture into sausage mixture; add parmesan cheese and blend well.
  3. Coat a 13”x9” baking casserole with cooking spray. Add Cauliflower Sausage Dressing; cover with foil and bake for 20 minutes.
  4. NOTE: Dressing may be made 1 day before serving. Refrigerate covered until ready to bake; bake until heated through in a 375’ oven.
