Tequila-Lime-Chicken & Spanish Rice
This recipe was created for my www.GunterWilhelm.com ‘Waterless Cooking System’ pot. It is an EaSY and DeLiCiouS recipe to put together AnD dinner is ready in under 30 minutes!! This pot was crafted with the highest quality materials which makes cleanup a breeze. The ‘drip spigot’ on the lid top is GeNiuS…this allows the tequila to slowly baste onto your chicken resulting in a very moist and flavorful entree.

Instructions
  1. Heat ‘Waterless Cooking System’ pot over medium heat (with lid on) for 2 minutes. While pot is heating: Season chicken breasts with taco seasoning. Set aside. Spray bottom of heated pot with cooking spray then add: Rice, tomato juice, zucchini, onion, red pepper, cilantro and stir to blend.
  2. Place ‘basket’ into pot. Place seasoned chicken evenly in basket. Top chicken with lime slices. Cover pot with lid. Add tequila to drip spigot on pot lid. Cook over medium heat until thermometer reaches 90 C (this takes approx. 10 minutes). Turn heat off (do not remove the lid) and set your timer for 10 minutes.
  3. Remove lid after 10 minutes. Chicken should be done perfectly. Remove the basket with chicken and stir the Spanish Rice.
  4. Can be served on a platter or served hot from your ‘Waterless Cooking System’ pot.
